Ingredients

  • 200 g Stuffed olives Anchovies, tuna, pepper, garlic ...
  • 2 Eggs
  • 90 g Flour
  • 90 g Breadcrumbs
  • Olive oil

Instructions

  • Let's start by preparing the breading. Begin by beating the two eggs well. This is essential for a good batter. One of the mistakes we often make is not beating them enough, this way they won't do as expected; creating a crunchy coating on the olives.
  • Make a double breading so that the olives are very crunchy. The greatness of this dish is the contrast between the exterior and the interior, generating a surprising flavor. For this we prepare a deep plate with flour.
  • On another plate we will place the breadcrumbs, which will be the element that will become the other protagonist of the breading.
  • Drain the olives well, place them on paper towel to get them to dry faster. If they are wet, the batter will not be as effective and they may look bad, so invest time in this part of the process.
  • Place the olives in the flour, coat them well until they are perfectly soaked. Then pass them through the egg and finally through the breadcrumbs. In this way you will have obtained a good breading.
  • Have the pan ready on the fire with plenty of hot olive oil. When it is ready we will fry the olives little by little, when they are golden we remove them and place them on paper towel so that they eliminate any excess oil.
  • Finally, when the olives are dry, you transfer to a bowl or plate.
